How well do you know your chocolate?
Robyn and Deidre from the St. Croix Chocolate Co. will take us back to the very roots of their gourmet chocolate. They will educate us on their scientific and artistic approach to making chocolate – all the way from the soil and ecosystem of the cocoa plants to the technical aspects of producing chocolates that are both beautiful and delicious. While we won’t be making chocolate in this class, we will do some sampling in the name of science.
